Sébastien Tantot is flourishing in this scenic inn (bare stone, beams, fireplace) in a medieval village on the Pierrefonds road in the heart of Compiègne forest. As the set menus (95% vegetarian) illustrate, the chef has a distinct weakness for vegetables, fruit and aromatic plants and herbs from his cottage garden. His sophisticated and balanced dishes are a treat for the eye and the tastebuds.
