On the first floor of an ultra-contemporary building in the heart of Lille, the former chef of Le Meurin, Mathieu Boutroy, works away in a superb open kitchen. With a single set menu that gives pride of place to fresh produce, he delivers perfectly executed dishes, including finely worked sauces and jus (such as the remarkable champagne sauce that enhances the halibut and roasted parsnips).
