For Thierry Schwartz, nature should be at the centre of food, an ethos borne out by his commitment to local Alsace producers. Joël Robuchon’s former collaborator concocts two outstanding menus, with 5 or 9 courses, in which the ingredients take the leading role, washed down with fine, preferably natural wines.

The chef's commitment
Since the opening of the restaurant 18 years ago, short supply chains have been our priority: 95% of our products come from less than 50km away. We contact our market gardeners and breeders every day and take their produce when it reaches maturity. Our menu changes twice a week. A large majority of our producers work in biodynamic farming and we encourage the reintroduction of old varieties of fruit and vegetables. We process waste with a "zero waste" objective.
