MICHELIN Guide’s Point Of View
A legendary address in the city that shines under the baton of renowned chef Jesús Segura. Occupying one of Cuenca’s famous “hanging houses”, it nowadays features a modern design but one which has retained its delightful Castilian-inspired wooden beams. Choose between two contemporary-style tasting menus (a longer 15-course option and a shorter 10-plate version, the latter only available from Wednesday to Friday), both with a wine-pairing option and based around locally sourced ingredients, with a particular focus on sauces and creams. The lighting here in the evening is delightful.
