MICHELIN Guide’s Point Of View
The source of the Trabe river lies in the grounds of this restaurant (hence its name), from where it gushes into a small lake and then flows silently alongside the outdoor tables, creating a delightful space for summer dining. In addition to this beautiful setting, the restaurant also champions various sustainable practices, such as harnessing the water to power the restaurant’s small hydroelectric plant housed in a 19C mill. In winter, the attractively rustic dining room is warm and inviting, although it is the cuisine itself that is truly memorable. The menu features elegant and skilful reinterpretations of traditional dishes from Campania, with the occasional tribute to mozzarella di bufala and other local specialities, while the excellent wine list also includes regional labels. Attentive service throughout completes the picture.
Gastronomy & Sustainability
"This splendid bucolic setting is home to a carefully restored medieval mill surrounded by a garden with a canal. Le Trabe has its own small hydroelectric system which produces clean energy for the farm and its neighbours in the surrounding area. The chef also talks proudly about the “creation of a biodynamic kitchen garden, which supplies us with most of our seasonal vegetables.”"
