The chef's commitment
This splendid bucolic setting is home to a carefully restored medieval mill surrounded by a garden with a canal. Le Trabe has its own small hydroelectric system which produces clean energy for the farm and its neighbours in the surrounding area. The chef also talks proudly about the “creation of a biodynamic kitchen garden, which supplies us with most of our seasonal vegetables.”
