The restaurant of Hotel Castelbrac is named after the boat of Commander Charcot, famous seaman and polar explorer. Born in Dinan, chef Julien Hennote has also explored other culinary universes ranging from the French Riviera to Polynesia. He professes a fondness for produce he sources locally and from sustainable coastal fishing boats (hand-picked scallops and abalone, lobster and seaweed), to which he adds his own ambitious spin, resulting in crisp, flavoursome dishes as if art directed. The desserts are wickedly decadent. The cosy dining rooms leads onto a panoramic terrace overlooking the pirate town of St Malo.
