MICHELIN Guide’s Point Of View

Situated between Morteau and La Chaux-de-Fonds not far from the French-Swiss border, this restaurant welcomes guests to the heart of the Haut-Doubs mountains. Here, chef Hugues Droz offers guests typical Franche-Comté hospitality, just as his father and grandfather did before him, paying careful attention to the seasons and with a judicious blend of regionality and inventiveness. He also enjoys creating themed meals, such as his mushroom-based menu where morel mushrooms feature in every course, including the banana morel and speculoos ice cream dessert. Other skilfully prepared recipes feature ingredients such as lobster, Morteau sausage, Bresse poultry, arctic char and foie gras. The German proverb “as happy as God in France” hits the nail on the head!
