MICHELIN Guide’s Point Of View

In this kitchen, the 20-something-year-old Taiwanese head chef successfully re-interprets Chinese cuisine with solid European techniques. His six- and seven-course prix-fixe dinner menus never fail to surprise, effortlessly melding modern aesthetics with traditional condiments such as Puning bean sauce, spiced marinade and Chinese herbs. As opposed to appellations or grape varieties, wines are classified by soil types and vintners. With only eight tables, reservations are highly recommended.
