Instead, the American menu with clear Southwestern influences is both complex and composed with buffalo and antelope along with classic-leaning filets. The dishes are surprising, offering bold flavors and new takes on the tried-and-true. Case in point? Their Lone Star mosaic, Fearing's take on carpaccio with tuna, wagyu beef, salmon, and barbecued eel composing a vivid plate resembling stained glass. Baklava S'more riffs on the campsite classic with puff pastry piped with milk chocolate pot de creme, pistachio marshmallow, and burnt rosemary ice cream for a refined finale.
