This restaurant in the Pleta de Mar Luxury Hotel by Nature is sure to leave a lasting impression, as—in addition to a high level of comfort—it offers wonderful views of both the surrounding Mediterranean landscape and the sea. The restaurant itself, with its open kitchen, is overseen by the prestigious chef Marc Fosh but managed on a day-to-day basis by Joan Sevillano (a young Mallorcan chef from Artà). The concept, which comes to life through the à la carte service and a tasting menu (Esencia), showcases what the region has to offer by celebrating charcoal grilling and the open flame, always from a contemporary perspective and using ingredients with Balearic roots, like fresh fish from the fish market, local meats, and seasonal vegetables. Everything is completely and utterly delicious, but we especially recommend the langoustine and free-range chicken, served with a delicious tomato conserve (presented in three different forms: a cold consommé, fritters, and in tartlets).
