A semi-finalist in French TV's "Top Chef" in 2020, the young Belgian chef Mallory Gabsi is taking his first steps in Paris, in this smart district near the Arc de Triomphe. Hailing from Brussels, he is no stranger to Belgium's Michelin-starred restaurants. He has created a short menu of modern, even trendy cuisine: salmon, cucumber, carrot and vanilla; pollack, green asparagus, sea urchin, and, for dessert, his grapefruit, gin and juniper is a great success. The Art Deco interior is reminiscent of the luxurious liners of yesteryear with its walls covered in light varnished marquetry and its wool-upholstered seats. Diners, already won over, are delighted to talk to the chef in person.
