Chef Huwaë draws on his Indonesian roots and other Asian influences to add pep to his inventive creations, and he is certainly not averse to contrasting flavours. This chef's talent lies in the harmony he achieves with combinations such as chicken satay, anchovies and vadouvan. Sometimes he keeps things a little more traditional, serving up langoustine cooked to perfection with a butter sauce with champagne, orange and Grand Marnier.
