Applying experience in Paris and Copenhagen, the chef layers Scandinavian innovation on top of Japanese ingredients and the French classics. Embodying these influences is ‘Fermented mushrooms’: mushrooms sourced from the chef’s native Shizuoka are fermented and paired with poached eggs.
