The interior is inspired by Fujian-style ink paintings, with water features dividing the room into zones. On the menu, premium produce from the province is deftly prepared by Fujian natives for the most authentic experience possible. Try the signature Shuizhu seafood trio – live prawns, razor clams and giant red squid are blanched in a mild mala broth over a bed of pickled broccoli stems, cucumber and bean sprouts for crunch and tartness.
