Hidehito Fukuhara prepares the dashi for cooking vegetables with the utmost care, going all the way to the foot of Hieizan to draw water from a well. The simple dishes are an expression of his sincerity. It was his mentor who taught him old-fashioned Kyoto cuisine. Seasonal dishes include ebi-imo with starchy sauce, steamed sushi and boar stew.
