Taketo Sasaki says he wants his customers to relax and enjoy their meal. Authentic kaiseki cuisine tends to be the epitome of formality, but he puts the diners at ease with his friendly hospitality. The tai from Akashi is a standard ingredient on the menu. Another distinctive feature is the use of rice and vegetables from his hometown of Ohara. An elaborate touch is evident in all the dishes, including the hassun with shuko and the chargrilled ayu.
