Two Stars: Excellent cooking
Sojiki-ryori, literally ‘herbivorous cuisine’, is all about appreciating nature’s bounty. Owner-chef Hisao Nakahigashi plans his dishes so that nothing goes to waste. The hassun expresses the rustic beauty of the country through all five senses. To match the mood of each season, the carp tsukuri is garnished with buds in spring and mushrooms in autumn, in a presentation the house calls ‘Koi no Karasawagi’, conveying Nakahigashi’s love of hill and dale.
