Sleeping in a cave sounds a bit like sleeping in a treehouse, or sleeping underwater; photogenic, to be sure, but questionable as a real-world lodging. But however unusual the concept might sound, Perivolas — encompassing a series of restored caves that once served as horse stables and fishermen’s homes, set into cliffs above the startlingly blue Aegean — looks and feels like a gorgeous boutique hotel on a Greek island. (There’s a certain logic to that, of course, because that’s exactly what it is.)

The 300-year old caves have been refashioned into 21 individual houses set among terraces gardens that look out, amphitheatre-style, over a stone courtyard, a tranquil infinity pool, and the sea beyond. Unsurprisingly, these “caves” are no longer dark and dank, but bright and peaceful, with whitewashed stone walls, vaulted ceilings, romantic nooks and arched doorways. Befitting the landscape, the interiors are minimalist and crisp white, with splashes of color — a vivid lilac-hued throw rug, cushions covered in fuchsia — and pared-down furnishings made of natural wood. Amenities vary across room categories — studios feature open-plan seating areas and cozy sleeping alcoves, while the Deluxe Suite has its own hammam; the spacious Perivolas Suite includes a private pool and a hot tub that accommodates ten. And there are a few constants across all the rooms and suites at Perivolas: bath products by Rituals, iPod docks, free wi-fi, coffee-making facilities, and sweeping views. Not to mention that there’s not a television in sight.

Down on the central terrace, closer to sea level, the infinity pool of your dreams awaits. Order cocktails here at sunset or come for a dip at dawn: it could easily factor in as the highlight of a trip to Greece. You can also dine poolside: Perivolas’s restaurant, housed in a cave that was once used as a wine cellar, offers candlelit outdoor seating. By day, explore the secluded region by boat, or just go for a stroll around Perivolas’ Eden-like property, dotted with old vineyards and fig trees that look especially lovely against the backdrop of the Aegean Sea.
