In the East Lothian town of Gullane, a mere 20 minutes’ drive from Edinburgh, is Greywalls, a stunning Arts and Crafts–style house built in 1901 by the architect Edwin Lutyens. Fine enough for country-house aficionados, but many guests are here for an even more famous neighbor: the legendary Muirfield golf links, home to the Honourable Company of Edinburgh Golfers, the world’s oldest club. The hotel’s rooms are modern in function but classic in their aesthetic; this is no resort, but a proper country house hotel. Chez Roux, the restaurant, is one of several upscale French restaurants across Scotland established by chef Albert Roux.
