The setting, in a portside town with roots that go back a thousand years, could hardly be more historical; Auberge Homachi Mikuni Minato is a collection of nine well-preserved townhouses, whose interiors have been renovated in a modern Japanese style to suit its new purpose as a luxurious and inventive small hotel. The name is a hint not only that it takes some of its inspiration from Europe, but that its cuisine is specifically French — chef Tateru Yoshino is a veteran of some of Japan’s finest French kitchens, and applies French techniques to Fukui seafood, with impressive results.
