Chef Guy Lassausaie masterminded the stylish top to toe refurbishment of this restaurant in a former Jesuit seminary (1853). You enter through a bar which boasts a jaw-dropping panoramic terrace, before heading downstairs into the restaurant, passing by the building’s Gallo-Roman foundations on the way!
