It seems impossible that something like this should exist in London’s northern exurbs, a mere half-hour from the city center, but here it is — a beautifully preserved Grade II-listed Georgian house on a 55-acre estate just half a mile into Hertfordshire is the venue for Birch, which is part country-house hotel, part members’ club, part retreat center, and part whatever it sets its mind to next. More than its location, though, Birch is notable for its philosophy — where most country-house hotels strive for exclusivity, Birch prides itself on inclusion, and the casual warmth of its service and atmosphere contrast starkly with the upright formality of its raw material.

The bedrooms, then, are not too precious about period correctness. Some are more modern than others, all of them are stylish and eclectic, and all of them are unpretentiously low-frills — comfortable enough, but far from lavish. Same goes for the restaurants; Valeries, in the mansion house, and the Zebra Riding Club, in the house’s old stables, are both the work of chef Robin Gill, who trained in top-tier kitchens but whose cooking here is approachable and down-to-earth. Roam the grounds, explore the interiors, mix with the guests and the staff — more than most hotels, it’s an experience that’s full of surprises.
