Shusaku Toba of Tokyo’s ‘sio’ manages this modern gastro-pub. Its space glittering with pink neon signs and mirror balls, creates a whole new world for izakaya. In similar vein, the cuisine is genre-free: many imaginative offerings break free from the confines of Japanese gastronomy. Examples include a salad of canned mackerel and shiraae of fresh fruit in season with mascarpone. The whole restaurant abounds with originality, as the chef’s playful spirit puts smiles on patrons’ faces.
