Claypot rice is only served at night and takes time to prepare, so order it first as soon as you’re seated. The three-rice blend results in a chewy texture and appealing fragrance; the bottom crust is always perfectly scorched. The white eel variety is especially popular; pair it with claypot dishes with excellent wok hei.
