In the evenings, he and his dedicated team showcase precise craftsmanship and top-notch ingredients in two intriguing and innovative three-, five- or seven-course set menus, one of which is vegan. The dishes are full of finesse and carefully composed, elaborate but not cluttered – a great example is the green asparagus, mushrooms, snow peas and beans. Options are more limited at lunchtime.
