These famous strands made with duck eggs are dried on bamboo skimmers outside the shop. Dried plaice is toasted on charcoal before being added to the flavourful broth along with pork backbones and dried shrimp. Customers who wish to enjoy the same taste at home can buy their pre-packed noodles.
