‘Japanese ramen’ was added to the name from a desire to spread Japan’s culinary culture to the world. As befits the name, the shop specialises in domestic ingredients. It serves two flavours of ramen: soy sauce and salt. The soup layers multiple sources of flavour on top of each other: free-range chicken, Berkshire pork, clams and mussels. Cooking over charcoal introduces a Japanese element. The food looks great, the aroma whets the appetite, the flavour captivates: this ramen sets all five senses tingling.
