                        Clinging to the rocks at the entrance to the Vallon des Auffes, Coline Faulquier's new restaurant commands a dramatic view over the Mediterranean, the Château d'If and the surrounding islands. In a dining space characterised by soft neutral tones, clean lines and floor-to-ceiling windows, the Marseille-based chef serves up vibrant, inventive and precise seafood cuisine. The dishes, often vegetable-forward, play on contrasts: hot/cold (confit artichoke, raw "cappuccino", basil and bottarga), raw/cooked (raw and cooked prawns, prawn-head fumet, Timut pepper, almonds) – they have real character, asserting their distinct culinary identity. And we would expect nothing less from this dynamic chef!
