Klemens Gold is a chef who is forging his own path. In his idyllically secluded little restaurant, he draws his inspiration entirely from his natural surroundings, which makes for a unique and exciting set menu. For his seasonal concept he uses the best the market has to offer, forages some items himself in the forest, grows vegetables and herbs in his garden, ferments and pickles. One example featuring a captivating interplay of flavours is the combination of oysters, sauerkraut juice, horseradish cream and parsley oil. The minimalist ethos of his "nature-based cuisine" is reflected in the upscale interior design with its clean lines, natural materials, earthy tones and floor-to-ceiling windows that look out onto the greenery. Service is cordial and adept – maître d' and certified sommelier Paul Piaty provides exceptionally well-matched wine pairings.
"Our location on the edge of the Kalkalpen National Park is rugged but bountiful – perfect for our nature-based cuisine that aligns with and is guided by the philosophy of the 10 phenological seasons! We forage for wild ingredients and source our animals for meat from nearby organic producers. We grow some of our vegetables and fresh berries in our garden and make sparkling tea using our own spring water."
