A modern and welcoming restaurant, its cuisine is best described by the slogan “Tradition & Innovation.” The menu, available both à la carte and as a tasting experience, features classic dishes such as Smoked Risotto with minced sheep meat and bay leaf, alongside more creative offerings such as Lettuce, almond tamari, and smoked kefir. Each creation is presented with contemporary flair and meticulous attention to detail, often enriched by oriental techniques and Nordic preservation methods such as fermentation, marination, and fish aging. The wine list is updated to match the seasonality of the menu and is complemented by a selection of homemade juices and kombucha, conceived for a refined non-alcoholic pairing.
"Thanks to this restaurant’s location on an island which boasts a wealth of zero-mile ingredients, a sustainable approach comes naturally to chef Martina Caruso, who says “We often work with local fishermen, choosing fish that are not always that well known, with moray eel and oily fish proving to be the most popular”. The chef’s focus on sustainable produce is also evident in her use of wild herbs and foraged ingredients, as well as the different breads made from traditional Sicilian grains.
