MICHELIN Guide’s Point Of View
FIEF comes from the initials of Fait Ici En France ("made here in France") because chef Victor Mercier, who became famous on TV in 2018, makes it his mission to cook only French ingredients (e.g. pepper from Gers, pigeon from Poitou, yuzu from Montpellier, miso from Burgundy). Thus he produces a creative menu that is spot on, from the cooking techniques to the sauces. Sit at the guest counter to experience it all close up!
