MICHELIN Guide’s Point Of View

Hideto Akiyama wants his customers to enjoy themselves without having to be formal. At lunch, shuko and soba are offered à la carte, and at dinner there is an omakase menu. It follows the flow of kaiseki, and simple dishes such as hijiki seaweed and vegetable aemono keep things interesting. Techniques learned at a sushi restaurant shine through in the bozushi and sushi roll. Instead of going for extravagance, he focuses on making the ingredients memorable.
