MICHELIN Guide’s Point Of View

The plastered walls surrounding the space make for a contemporary feel. Nozomu Yamai follows the tradition of chakaiseki and conveys the season using both antique and modern serving dishes. He puts his all into having the dishes suit the weather that day. For example, in early summer, he uses hot eggplant to rejuvenate, and a bowl made of ice to provide a sense of cool. The temperature variations inspire the eater and convey the beauty of Japanese cuisine.
