MICHELIN Guide’s Point Of View

Yusuke Kondo wears a chef’s jacket instead of a headband and T-shirt because he wants to get rid of the old stereotype of a ramen restaurant. He explores and experiments with ingredients to create Chinese noodles for today. His signature ‘Kuradashi Shoyu Soba’ is a prime example. For the soup and the roasted fillet, he uses guinea fowl, referred to as the ‘queen of poultry’ in French cuisine.
