An 1837 manor house set between Troyes, Dijon, and Chablis, is a fine exemplar of hospitality in the Burgundy wine country. Château de Courban & Spa Nuxe is devotedly historical in its exteriors and its public spaces, but it’s been subtly updated into a quite contemporary luxury hotel; rooms retain their period romance even amid modern amenities and decorative elements, while the spa is state-of-the-art. The grounds are magnificent, as is the pool deck, but the hotel’s crown jewel is undoubtedly the Michelin-starred restaurant, presided over by the Japanese-taught and French-trained chef Takashi Kinoshita.
