Osteria Sincerità is a three-room inn and Italian restaurant in Yamagata’s Okitama Valley, where clean mountain air and sharp temperature swings influence everything from the vegetables to the Yonezawa beef. Chef Makoto Harada cooks with focus: housemade pasta, dry-aged heifer cuts, seasonal produce, served in a dining room as intentionally composed as the food. One suite has a Finnish sauna; both face the fields. It is two and a half hours from Tokyo, but it moves at an entirely different pace.
