MICHELIN Guide’s Point Of View

Takahisa Uchitsu’s credo is harmony between Edomae tempura and the four seasons. In early summer, ayu is fried in a thin batter and garnished with salted ayu innards. Deep-frying whole winter crab in its shell makes for consistency of flavour between the white and brown meat. Elaborate shuko based on techniques cultivated in kaiseki are mixed in to keep things interesting. During cherry blossom season, the counter seats let you enjoy the sight of night-time cherry blossoms.
