MICHELIN Guide’s Point Of View

The chef’s fresh ideas are unrestrained by the bounds of French cuisine. If he wants to add savouriness to the seasoning, he uses miso or karasumi, and he uses green curry sauce for spiciness. He creates items of varying tastes, bringing out the depth of the five flavours. He also incorporates pasta and rice dishes into the set menus based on his experience with Italian cuisine.
