MICHELIN Guide’s Point Of View

The elegant dining room features a royal purple theme and, being on an upper floor, offers great views. Yosuke Akasaka directs the kitchen and carries on the esprit of the creative Pierre Gagnaire, whose nickname is ‘the Picasso of the kitchen’. Out of his love and respect for Japanese culture, he aims to bring together Japanese and French elements; the white plates are like an artist’s canvas and the colourful arrangements often include playful touches.

We use a composter for our kitchen waste. We then provide compost to farmers and procure vegetables they grow to complete the food cycle.
