MICHELIN Guide’s Point Of View

The sushi prepared here is mainly ‘mature sushi’. That is, the owner-chef pursues a method of allowing seafood for Edomae sushi to mature. He selects his fish with a discerning eye, and uses methods such as wind-drying or salt-pickling. He wants diners to experience how delicious tuna can be, so bluefin tuna nigiri is made from chu-toro and pairs well with the rich akazu vinegared rice. There is no sign outside; push the intercom button for admittance.
