Overlooking Liberation Square, this buzzing restaurant takes inspiration from the chef’s time working in Spain. Ingredients from Jersey and the surrounding area meet techniques often associated with the Basque region; glowing hot coals and a wood-fired oven are both visible in the open kitchen, with a few counter seats available if you can stand the heat.
