MICHELIN Guide’s Point Of View

The set menu combining creative dishes with yakitori is unique. It starts with ricotta cheese oden cooked in chicken dashi. Noto salt is sprinkled on Akita chicken grilled on a grill that has been set up to ensure even heating from the charcoal. À la carte dishes such as duck grilled with sansho, fruit shiraae and tomato compote are served between yakitori items to vary the tastes.
