MICHELIN Guide’s Point Of View

The owner-chef created his own unique style after extensive study and says he wants to give guests the taste of sushi, not overly relying on soy sauce and salt. Flounder sushi is served with sudachi soy sauce, and chu-toro with foamed soy sauce that melts in the mouth. The vinegared rice is only mildly sour, while the shuko that you can leave for him to decide on, and everything else here, embodies his experience in Japanese cuisine.
