MICHELIN Guide’s Point Of View

Owner-chef Toshinori Sakakibara uses culinary techniques handed down from his grandfather. He applies light coatings of batter to his tempura, using no eggs, and fries it in a unique blend of oils. Instead of serving tempura with dipping sauce, the Kyoboshi style is to offer homemade salt, lemon juice and grated daikon. Use of guji as a staple ingredient is quintessentially Kyoto. The fare is creative at every turn, with offerings such as brandy and sugar for sweet potato.
