The name means ‘half and half’, as the omakase set menu features half meat and half vegetables. Following kappo and sushi apprenticeships, the chef was inspired to try some unique takes on meat dishes, substituting kaiseki fish dishes with beef, pork, chicken and other meats. Chicken wings stuffed with enoki mushrooms wrapped in kombu and norimaki of Chinese yam showcase practised skill and imaginative licence in equal measure.
