MICHELIN Nordic Countries Chef Mentor Award 2020: Rasmus Kofoed of Geranium

The MICHELIN Guide Nordic Countries 2020 was launched on Monday 17th February, at a Star Revelation event in Trondheim, Norway. It was hosted by the International Director of the MICHELIN Guides, Gwendal Poullennec.

During the event, special awards were presented for

• Sustainability
• Welcome and Service

Winner of the MICHELIN Nordic Countries Chef Mentor Award 2020 is Rasmus Kofoed of Three-Starred Geranium in Copenhagen, Denmark. He is a culinary ambassador for his country and provides great encouragement for young chefs through his work in the Bocuse d’Or competition.

The award for Chef Mentor was presented by Peyman Sabet, Managing Director of MICHELIN Nordic AB.

Geranium
Chef Rasmus Kofoed first opened his restaurant, Geranium, in the centre of Copenhagen in 2007. In 2010 it relocated to the 8th floor of the National Football Stadium and has stunning views out over Fælledparken.

This luxurious restaurant was awarded One MICHELIN Star in 2012, quickly followed by Two Stars in 2013, and finally Three MICHELIN Stars in 2016 (the first – and only – Danish restaurant to achieve this accolade).

Rasmus’ unique style of modern Danish cuisine showcases the finest organic and biodynamic ingredients in pure, well-balanced dishes which not only look incredibly beautiful but also taste sublime.

Bocuse d’Or Competition
Rasmus is well known for representing Denmark in the famous Bocuse d’Or culinary competition.

He captained the Danish team for seven years, winning Bronze in 2005, Silver in 2007 and eventually Gold in 2011; at the time, he was the only chef to have competed 3 times.

Since then he has continued to coach young Danish chefs to victory – inspiring the next generation with his passion for gastronomy.

When asked at the launch event what it means to him to be recognised as a mentor, Rasmus said,

“It’s a big honour. I did not expect it. I’m very emotional about it. I’m glad that I can inspire with the love I have for my craft.”

Expanding more on what motivates him, Rasmus said, “I cannot hold it in. I love to cook. I love to share ingredients – to work with the creative part of running a restaurant... And I also have to remember to live my life. I mean we are not working, we are living our lives in the kitchen and it’s very important to think about that and to stop and enjoy and share your knowledge.”
