Live Update: New Restaurants in the MICHELIN Guide Nordic Countries - June 2022 Part 1

Hot off the press, the MICHELIN Guide Inspectors reveal some of their favourite additions to this year’s Nordic Countries Guide. In this article we focus on Denmark...

The annual MICHELIN Guide Nordic Countries Star Revelation is set to take place on Monday 4th July at 6pm (CET). It is then that we will find out which restaurants have been awarded Michelin Stars, Bib Gourmands and Michelin Green Stars for 2022.

Before then we have our final set of live additions, covered over two articles this month – the first of which comes from Denmark. The second article focuses on Finland, as well as containing further updates for Norway and Sweden. The guide also covers Iceland.

You'll find the newly recommended restaurants listed on both the Michelin Guide website and iOS and Android apps: they’re easy to spot, as they’re highlighted by a ‘New’ symbol.

Two experienced chefs run this homely little restaurant, incongruously located in the industrial district. Organic pork, lamb and vegetables come from their nearby farm, Anneksgården, and dishes are a mix of the refined and the rustic.

Its name means ‘Bear’s Basement’ and there are stuffed bears, pictures of bears and bears in stained glass at this rustic, characterful restaurant with its cosy nooks and friendly service. Carefully prepared lunchtime smørrebrød makes way for more substantial dishes in the evening.

The ‘connection’ is that between the restaurant and the guest, which makes for an intimate, memorable dining experience, starting with a warm welcome from the eponymous chef-owner. The restaurant grows much of its own produce and dishes are assured, well-balanced and full of flavour.

Jonathan Tam, the former head chef of Relæ, has opened his own restaurant with partner Sarah: an intimate spot in the Nørrebro neighbourhood. The set menu draws on his Chinese heritage, along with his years of experience in Nordic restaurants.

This beautiful building sits in a superb location looking out to sea; Patrick Lieffroy is the eponymous chef-owner, while his wife Helle is in charge front-of-house. A well-chosen wine list accompanies the classic French dishes, and professional service completes the picture.

Bornholm’s second most populated town is home to this unassuming-looking restaurant, sister to Det Røde Pakhus. Start with a drink in the bar, then head up to the first floor to dine on seasonal produce while enjoying views of the sea.

The Annebergparken is the location for Claus Henriksen's latest eatery, which takes the best ingredients from local Danish producers – including many from the nearby fjord – to create dishes that are fresh, innovative and bursting with flavour.

It's all about fish and shellfish at this cosy, buzzing restaurant – if they can find it in the nearby waters, then you’ll find it on your plate. Dishes are carefully cooked and immensely satisfying, and lively service from a team of locals adds to the fun.
