One Star: High quality cooking
Fortunately, there are still restaurants that exist with a strong family lineage – and Oseille is a perfect example. Run by chef Thomas Troisgros (son of Claude Troisgros, grandson of Pierre Troisgros and nephew of Michel Troisgros), it is located in the heart of Ipanema, right above the Toto restaurant (also part of his stable). Here, in a minimalist space that stands out for its profusion of wood and the prominence of a 16-seat “U”-shaped counter with a kitchen in the middle, guests can enjoy a heightened fine-dining experience through a unique, and modern-inspired tasting menu (5 or 7 courses) showcasing strong French technique and the best local ingredients (we were bowled over by the dish featuring “cavaquinha”, a crustacean similar to lobster). The name of the restaurant takes its inspiration from the legendary “saumon à l'oseille” (salmon with sorrel), created in 1963 by Thomas’ grandfather, the great French chef Pierre Troisgros.
