MICHELIN Guide’s Point Of View

From his training in Italy, the chef learnt creative, modern Italian cuisine. He weaves into it elements of Japanese culinary culture and Kyoto ingredients. The set menu starts with numerous amuse-bouches and appetisers. The presentations have a playful aspect, conveying the pleasures of dining. Ingredients in which the intrinsic flavours should be brought out, such as meat dishes and handmade pasta, follow tradition without any showiness.
