MICHELIN Guide’s Point Of View

Owner-chef Fumitaka Nakahara received his training from none other than Alain Passard, once known as ‘the wizard of meat’ but who is today famed for his vegetable cuisine. Calculating how long the meat will take to cook, he serves it together with the all-important vegetables. Nakahara’s trademark approach is to focus on a single ingredient. For example, if the ingredient is mushrooms, he may array them sliced, sautéed and powdered, all on a single plate.

Interacting with producers
I work to support the region and conserve the environment. I use vegetables grown in the fields of Ohara or by my father without the use of chemicals. To help protect marine resources
I do not specify the type of fish when purchasing them but use whatever has been caught that day.
